Lime Tea Cookies

First time making these cookies, they turned out to be very delicious. They are amazingly light and fluffy. It's a great light treat with a cup of tea or coffee.

Ingredients:

2 tsp lime juice
1/3 cup milk
1/2 cup butter, softened
3/4 cup sugar
1 egg
2 tsp lime zest
1 3/4 cup all purpose flour
1 tsp baking powder
1/4 tsp baking soda

For glaze:

2 tbs lime juice
1/4 cup sugar powder

Direction:
  1. Preheat oven to 350F (175C). Combine the 2 tsp of lime juice with milk, let stand for 5 minutes.
  2. In a large bowl, cream together the butter ans 3/4 cup sugar until light and fluffy (about 4 min) . Beat in the egg ( about 1 min), then stir in the lime zest and milk mixture (about 3 min). Combine the flour, baking powder, and baking soda, blend into the creamed mixture (about 2 min, stir to speed 2). Drop by rounded spoonfuls onto the ungreased cookie sheets.
  3. Bake for 8 to 10 minutes ( but i baked for 18 min) in the preheated oven, until the edges are light brown. Allow cookies to cool on baking sheets for 5 min before transferring to a wire rack to cool completely.
  4. To make the glaze, stir together 2 tbs lime juice and sugar powder. Brush onto cooled cookies.

Let the glaze completely dry before putting it into air steel container. Hope you will enjoy these tea time cookies.

A Textbook

This is the first "textbook" that my friend gave me. It's the thickest and all I can see is words. Total of 1020 pages.

Tell u the truth, this isn't a textbook, it's a book of baking and pastry from Chef Bo.

Chef Bo Friberg is the Executive Pastry Chef at the San Diego. He has received two gold medals at Culinary Arts Exhibit of the Pacific Coast. And also demonstrated the art of pastry making on television shows.

Here are some pictures of Chef Bo's masterpieces.

Pink Piano Ice Cream Cake

This is my new cake design --My Melody. The idea was from my co-worker. She wanted a pink heart-shaped cake with piano keys and notes on it.

I used semi-sweet chocolate for the notes and marzipan for the piano keys
. Oh and also it's mango and sesame flavor ice cream! =)

I know I know.... I need a lot of improvements. Give me some more time please!

Easter Cake Pops

Here's my first cake pops design after reading a post at Bakerella. She gave me a lot of inspirations on the cute little bunnies above. Thanks!

Making these cake pops wasn't as easy as I thought. There were so many steps involved, so much time spent and so many mistakes...but when I saw the finished work, it's sooooooooo worth it. =)

After mixing the strawberry cake with frosting, this is the first appearance of the bunnies, but I was told they looked like flowers.

Do they still look like flowers? =)

Here we go, Cute Cute little Bunnies Cake Pops.

Can't have Easter without Easter eggs. This time I used fudge marble cake mix, but after mixing the frosting it's just like chocolate cake.

Love making marble cakes.

Happy Easter!
